Finca 1816 was born in San Antonio, Texas — from a deep respect for Argentine culinary tradition and a love of authentic flavor. The idea was simple but uncompromising: make chimichurri the way it's actually made in Argentina. No shortcuts. No heat. No preservatives.

Every jar carries the name of the year that made history — 1816, the year of Argentine independence — because we believe true flavors also deserve their place in history.

Finca 1816 nació en San Antonio, Texas — del respeto profundo por la tradición culinaria argentina y el amor por el sabor auténtico. La idea era simple pero sin concesiones: hacer el chimichurri como se hace de verdad en Argentina.

The year Argentina declared independence. We carry that name as a reminder that authenticity is worth fighting for — in history, and in flavor.

Cold-process. Todo en frío.

Our non-negotiable: every batch is made cold. We never use heat to accelerate the process or extend shelf life. The herbs are hand-chopped — never machine-processed — to preserve the rustic texture that makes real chimichurri what it is.

We measure pH before adding oil, test every batch, and only jar what passes our standard: below 4.0 pH, well under the FDA safety threshold. But beyond the numbers, we taste every batch — because the real test is in the flavor.
